Thanksgiving Made Easy

This Thanksgiving Chef Marisa, owner of Catalano's Delicatessen, is here to help you prepare for the holidays. Once a month she hosts a cooking class and this month one of our own was able to attend and get the full experience. The theme was "Fall Bounty" and one of our favorite recipes is this mouth-watering Apple Crostada with Salted Caramel Sauce. Just in time to try as a new desert for Thanksgiving! We have featured the recipe below so let us know if you try it out and what you think! Also -- see below the recipe for a very special Catalano's Thanksgiving offer!

Apple Crostada with Salted Caramel Sauce

Serves 4

For the crust:

8 tablespoons butter, diced

2 cups flour

½ teaspoon salt

2 tablespoons sugar

1 egg yolk

½ cup sour cream

In the bowl of a stand mixer, combine the butter, flour, sugar and salt. Using the paddle attachment, beat on low speed until it reaches a sandy consistency.

Whisk the yolk and sour cream together and add to the bowl, continue to beat until a dough forms. Remove it from the bowl and paddle onto a floured surface. Bring together into a disk, wrap with plastic wrap and chill for 1 hour.

Roll the dough out into a large, evenly thick disc. Starting at one end of the disc, roll the dough up onto the rolling pin and then roll out again onto a parchment lined sheet tray.

For the filling:

5 apples, cored, cut in ½ -inch thick slices

(you can replace apples with pears, berries, walnuts, raisins, pine nuts etc..)

½ cup sugar

1 teaspoon cinnamon

½ teaspoon allspice

½ teaspoon nutmeg

2 tablespoons heavy cream

Natural sugar

2 tablespoons butter

Preheat the oven to 350 degrees.

Combine the apples, sugar and spices in a mixing bowl and toss well to coat. Pour the filling into the center of the rolled out dough. Fold the edges of dough up around the filling leaving the center open. Using a pastry brush, brush the edge of the crostada with cream and then sprinkle with natural sugar. Dot the center with butter.

Bake for 30 minutes, until the crust is golden brown and the apples are softened. Remove and cool before slicing.

For the sauce:

1 cup sugar

6 tablespoons butter

½ cup heavy cream

Coarse sea salt

Combine the sugar and butter in a saucepan over medium heat. Cook, whisking continuously, until the mixture begins to turn golden brown. Add the cream while whisking vigorously until smooth. Serve poured over a slice of crostada with the sea salt sprinkled on top for garnish.

YWCA Announces Ribbon Cutting Ceremony to Introduce Church Street Couture

LYNCHBURG, VA—Join the YWCA of Central Virginia for a ribbon cutting ceremony at 9:45 a.m. on April 17th as it expands its Church Street Bridal brand to include a couture shop featuring high-end designer gowns. Church Street Couture will be located in the Galleria at 915 Main Street, downtown Lynchburg. Church Street Couture will feature high-end formal and bridal gowns from designers such as Henry Roth, Alvina Valenta, Melissa Sweet, Vera Wang and others. Dresses are donated directly by shops and designers from around the country and are sold at affordable prices. Bridal gowns will be priced at $350, $500 and $650 and formal gowns will be priced at $150, $200 and $250. The shop will be open Mondays through Saturdays 10:00 a.m. to 5:00 p.m. Church Street Couture will benefit the YWCA’s programs such as the Domestic Violence Prevention Center, which houses and assists victims of domestic violence abuse, and the Transitional Housing Program, which houses and assists homeless women.
At the ribbon cutting ceremony staff will be on hand for a question and answer period for the press.
Church Street Bridal and Church Street Bridal, TOO remain open Tuesday through Friday 3:00 p.m. to 6:00 p.m. and Saturday 12:00 p.m. to 5:00 p.m. They are located in the YWCA, 626 Church Street, downtown Lynchburg.

Lynch’s Landing and the Lynchburg Historical Foundation each presented checks to the Lynchburg Museum Foundation this morning to help them obtain their goal of raising $20,000 to restore the clock tower and bells in the Lynchburg Museum. The presentation was made by the respective board presidents, Michael Lucado and Chris McSwain, to Rob Carrington, the chair of the museum board, on the steps of the museum.

The two groups banded together to make sure that another piece of Lynchburg’s history was restored to its former glory. One day soon, the bells will toll the hours through downtown Lynchburg as they did in the past.

Several years ago, Lynch’s Landing worked to raise funds for the renovations to Monument Terrace. “Lynch’s Landing was involved in the Monument Terrace renovation several years ago. We felt the restoration of the Old Court House clock and bell complemented that project and met the downtown revitalization goals of our organization. We are very pleased to be working with these other organizations to bring this historical time piece back to life for the people of Lynchburg.” Mike Lucado, President of the Lynch’s Landing Board of Directors.

Lynch’s Landing continues to provide funds to downtown property owners to refurbish the facades of their historical buildings. As you walk the streets of downtown, you will see plaques awarded by the Lynchburg Historical Foundation recognizing those who have restored their buildings to reflect their historic character.

The mission of the Historical Foundation is: to acquire, restore and preserve sites, buildings, structures, documents, and objects that are located in, related to, connected with, or illustrative of the history and culture of Lynchburg, Virginia and/or the United States; to encourage others to do likewise; to promote an understanding of history, architecture, and culture through educational programs, exhibits, publications of historical materials and otherwise; and to take or receive gifts and bequests of money or other property, real or personal, for any such purpose or purposes.

The mission of Lynch’s Landing is to identify opportunities and develop resources that position and sustain downtown and the riverfront as a vital economic, cultural, historic, recreational and residential center for our community.
